After creating the artichoke hearts and cutting them into 4 parts, we cook them in boiling water to which we add white vinegar (to prevent possible oxidization of the product) and salt. When they have cooked to the right degree, we drain the artichokes and let them rest on a tea towel for about half an hour. Then we put them in jars and cover them with extra-virgin olive oil. We fit the lids and sterilize the jars and contents in a double boiler. Excellent as an accompaniment to mixed cured meats or roast game.
