Called the “King of Rices”, it remains firmer when cooked because it contains a larger amount of amylose. Ideal for all haute cuisine dishes.
Well-suited to “risotto tirato”, that is, cooked slowly at a simmer, adding liquid at intervals and stirring frequently. We have prepared it with all kinds of condiments and have even made a “Risotto Al Fortana”. The classic risottos of our region are prepared with eel sauce or coot sauce. Our Fortana sparkling wine makes an ideal accompaniment.
